Good, Whole Food ,Takes Time
I wrote a note in my journal a while back. It was this reminder, "Good, whole food, take time to prepare."
The idea, or rather the habit, I was trying to instill was, and still is, to start the process of preparing meals in the morning.
Starting an hour, or even two hours, before dinner is too late. At our house we are rarely home before 4:30 PM, most often it is closer to 5 PM. If we want to eat dinner by six or even six-thirty then I have to start early.
Tonight, we are going to have Quiche Lorraine with Cheese and Spinach. There is no way I could start it at 5ish and have it on the table by dinner at 6 O'clock. Not with a four-month old baby to mind, homework to supervise, dogs to feed, and all the various tasks that need my attention in the evening.
So, this morning I had the spinach thawing on the kitchen counter. Then I made the pie-crust and the filling. By the time I leave to pick the kids up from school, and take Opal to ballet, the pie will be one step away from being assembled, so all I'll have to do when I get home is pour the egg mixture into the crust, pop it in the oven, and there we have it. Dinner. A delicious dinner.
It has taken me only ten years raising my family to figure this simple truth out. And yes, I've tried the Once A Month Cooking...I didn't like the taste of the meals after sitting in the freezer for weeks or months, no matter how delicious it started out. And yes, I do use my crock-pot on occasion, though mainly for chili. I am not crazy about the way meals taste after sitting in a crock-pot all day.
This is just another way. Start dinner in the morning, and be amazed at the results.
The Recipe for Quiche Lorraine with Cheese and Spinach
prepare 1 Pie Crust (I love the flaky pastry recipe from Joy of Cooking)
4 ounces turkey bacon. Cook and cut into small pieces.
Combine 3 eggs, 1 1/2 cup whole milk, 1/2 tsp. salt and 1/4 tsp. pepper. 8 ounces cooked & chopped spinach.
Sprinkle 1 cup of cheddar cheese over the prepared pie crust. Pour the egg mixture & turkey bacon over the top of that. Bake in a 375 degree (f) oven for about 30 minutes, or until it is set in the middle.
Enjoy!
